This is a floating green chile taco on the International Space Station made by Hatchstronaut Megan McArthur.
The first green chile space taco had a NMSU chile variety called the NUMEX Española Improved in it. The space pepper, and the first fruit ever grown in microgravity was completed by NASA in 2021 during an experiment called PH-04: Hatch to ISS. The seeds came from The Chile Pepper Institute and the Self proclaimed Hatchstronauts asked the NM state question, Red or green.
